Yam, elephant’s ear

Quilted, satiny green leaf up to 1m in length.

The starchy, tuberous roots are the staple diet of the South Sea Islanders. They need to be simmered for about 8 hours, whereby the water has to be changed thrice. The edible 8-20 cm long and to 20 cm thick tuber is a popular vegetable in the West Indies, also known als “Yam” in Hong Kong.
